What types of books non-fiction to write?

I have been an International consultant to the kosher food certification industry over 50 years. I have traveled the world on assignments. I have many first hand stories about many other areas in life. I'm always told by many "you have to write a book". How does one do that? Ghost character?, my own name, pen name? etc

Me and my wife have helped over 15,000 people over the past 20 years in the area of I received a driving ticket, what are my options, How to find a lawyer?, How to deal with the court, etc.

We are interested in writing a book(s) how not to get stopped by police, how do operate a safe vehicle, your options, getting a lawyer, court, etc.

How many pages should a book be?

Self-publish? Audio books? e-books, soft cover, hard cover, series, etc.

Yehuda, you should read several dozen books in your genre to learn the conventions and expectations of readers. I would urge you to use your own name and be as helpful and reader-oriented as you can be.

And don't use the phrase "Me and my wife..." That alone could cost you an agent or publisher's interest. :)

Exhaust all your efforts to traditionally publish before resorting to self-publishing (paying to be printed).
